Burgers and Fries for that Vegas Bod

With Spring Break being in just 2 weeks, I’ve been hearing a lot of talk about cleansing and eating healthy for that “Vegas Bod.” Although most people say this as a joke, I figured I’d take this as the perfect opportunity to share a healthy substitutes for burgers and fries. Feel free to use these recipes whenever. They taste great whether you are eating healthier to prep for Spring Break in Vegas or you just like eating healthy. 🙂

1. Spinach Burgers

Ingredients
  • 1 bag of thawed and well drained chopped spinach
  • 2 egg whites
  • 1 whole egg
  • ¼ c diced onion
  • ½ c shredded cheese
  • ½ c bread crumbs
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp garlic powder
Instructions
  1. Mix all ingredients in a bowl.
  2. Shape into patties and
  3. Cook over medium high heat in a non stick skillet with a small amount of cooking spray.
  4. Patties are done when they are golden and firm.(About 4-6 minutes)

2. Baked Zucchini Fries with Sweet Onion sauce

Ingredients
  • 3 medium sized zucchinis
  • 2 tablespoons cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon prepared mustard
  • 1/2 pound sliced sweet onion
  • 1/2 cup of mayonnaise
  • 1 cup Panko bread crumbs
  • scant 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon Pizza Seasoning or mixed Italian herbs
  • 2 eggs
Instructions

  1. Cut each zucchini into 9 pieces then cut each of the 9 pieces in half (picture above)
  2. Place the zucchini sticks in a colander over a bowl, and sprinkle with 1 tablespoon of salt. Let them drain for 1 hour or longer.
  3. While the zucchini is being drained,  it’s time to work on the dip!
  4. Melt 1 tablespoon butter in a medium-sized frying pan over moderate heat
  5. Add 1 sliced medium sweet onion (about 1/2 pound) to pan
  6. Cook until sweet onions softens and caramelizes (About 20 minutes)
  7. Remove from heat once onions are browned (hint. the lower the heat, the longer it takes, but the less likely it will be that you burn the onions)
  8. In a small food processor or blender put the caramelized onions, 2 tablespoons of cider vinegar, 2 tablespoons of honey, 1 table spoon of mustard
  9. Process until fairly smooth and pour into a separate bowl
  10. Add 1/2 cup of mayonnaise
  11. Now that you’ve made the dip, it’s back to the zucchini!
  12. Preheat the oven to 425 degrees
  13. Rinse zucchini to get rid of excess salt
  14. Combine and mix bread crumbs, grated parmesan cheese, and pizza seasoning (this is your dry mix)
  15. In a different dish, beat eggs
  16. Dip Zucchini piece into egg then into the dry mix (repeat until each zucchini piece is coated)
  17. Set zucchini pieces onto a tray and place tray into oven for 12 minutes
