Vegas Sugar

While I was in Vegas during Spring Break, I was able to eat at a few of the buffets and there was one dish that I made sure to get at all of them-creme brûlée. Inspired by the college cooking & baking, I decided to figure out whether or not it was possible to make this dessert the college way (with a microwave of course). Here’s what I found!


  • 2 oz cream cheese
  • 1 egg yolk
  • 3 1/2 table spoons sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup


  1. Microwave cream cheese until soft (10-15 seconds) in a small bowl
  2. Whising cream cheese
  3. While whisking cream cheese, add in egg yolk, vanilla extract, and 2 tablespoons of sugar until smooth
  4. Pour mixture into ramekins
  5. Microwave until center of cream cheese is set (25-35 seconds)
  6. Remove from microwave
  7. In a different small bowl, mix together maple syrup and  1.5 table spoons of sugar
  8. Microwave until bubbly (10-20 seconds)
  9. Drizzle over creme brûlées
  10. Set aside until topping harder (about a minute)
  11. Enjoy!
