Muffin-Tin Meals

I love cooking, but I don’t always have time for it. Muffin-Tin meals are a great way to cook food that will be ready for that morning grab-and-go rush. Here are a couple of recipes!

Potato Cup Frittata

You need:

  • 1 muffin-tin
  • 6-7 eggs
  • Veggies of your choice (for example, the veggies you would put in an omelet are a good start)
  • 1/4 cup half-and-half
  • 1/2 shredded cheese
  • Shredded potatoes
  • Olive Oil
  • Salt
  • Pepper

Directions:

  1. Preheat oven to 375 °
  2. Spray oil onto muffin tins
  3. Press shredded potatoes on the bottom and sides of the muffin tin to form cups
  4. Once the oven is preheated, put muffin-tin into oven until potato shreds are browned (30-40 minutes)
  5. While that’s in the oven, break eggs into a medium size bowl and whisk
  6. Cut up and sauté your veggies in a frying pan
  7.  Add sautéd veggies and cheese to  whisked eggs
  8. Take the muffin-tin out of oven, distribute egg mixture among the cups
  9. Put muffin-tin back into oven for 10-15 minutes
  10. If needed, add salt & pepper to taste
  11. Enjoy a couple and store the rest of later!

Baked Oatmeal

You need:

  • 1 muffin-tin
  • Oatmeal (I use Old Fashion Quaker Oats, but any oats work)
  • A variety of your favorite oatmeal toppings (blueberries, chocolate chips, or almonds)
  • muffin liners

Directions:

  1. Preheat oven to 350°
  2. Follow the directions on the oatmeal box you are using to create an oatmeal mixture in a medium sized-bowl. (For example, the box of oatmeal I use says to combine 2.5 cups of water and of 1.5 cups of oatmeal to make 3 serving)
  3. Put muffin liners into muffin-tin
  4. Distribute oatmeal mixture into muffin-tin
  5. Top each cup with your favorite oatmeal toppings
  6. Put muffin-tin in oven for 30 minutes
  7. Let it cool for 5 minutes
  8. Enjoy a couple and store the rest of later!

Pancake Bites

You need:

  • 1 muffin-tin
  • 2 Cups All Purpose Flour
  • 1 cup milk
  • 2 eggs
  • A variety of your favorite pancake toppings (bacon, breakfast meat, chocolate chips, or blueberries)

Directions:

  1. Preheat oven to 425°
  2. In a medium size bowl, combine flour, milk, and eggs and stir until there are no lumps
  3. Distribute pancake batter into muffin-tin
  4. Top each cup with your favorite pancake toppings
  5. Put muffin-tin in oven for 20 minutes
  6. Let it cool for 5 minutes
  7. Enjoy a couple and store the rest of later!

What I love about these recipes is that creating a variety of tastes is easy. Three of the cups can have one veggie combination (frittata) or topping (oatmeal), another three could have a different veggies combination or topping, and so on. So feel free to experiment!
